Olive Appetizer

PRO TIP

Pickling is a great way to save foods that are about to go bad and extend their life beyond their peak season.

Some of Chef Liz's favorite quick pickles:
• Green beans with hot sauce
• Beets with warm spices and garlic
• Cauliflower with curry

Olive Appetizer

PRO TIP

Simple syrup is a great way to use
fresh herbs and fruit that may be
past their prime. Aptly named,
making simple syrup is really quite
simple. just mix blah blah blah -
cocktials, mocktail, coffee sweetners

Olive Appetizer

PRO TIP

Making a seasonal fritata is a great
way to use up little bits of leftover
veggies, meat, and cheese that you
might not have any other use for or
be wondering what to do with.

LOCAL

We’re proud of the personal relationships we've built with our vendors. We trust them to supply us with the highest quality ingredients. Sourcing regionally also allows us to support our local economy and reduce our carbon footprint. We prioritize sourcing regionally from Minnesota, Wisconsin, and Iowa. We also grow many ingredients in our own garnish garden and make lots of items in-house. Here are some examples of specific items we source locally.

Basket of Organic Vegetables

ORGANIC

We use as many organic ingredients as we can. It’s not only better for the health of our clients and staff, but it also supports the health of our planet by keeping our water sources free of contamination. This also ensures that the people who grew our food weren’t exposed to harmful chemicals in the production of growing and harvesting the crops. When it comes to sourcing produce, we look to the Environmental Working Group for guidance on which items are most important to source organically vs which are more ok to source conventionally when organic isn’t available.
